B&B Recipe of the Week - Chunky Funky Granola
For a healthy start to the day, Kathy Brosnan of Applecroft Bed and Breakfast in Killarney serves her guests a delicious nutritious bowl of her famous Chunky Funky Granola. Kathy makes her granola using the finest ingredients including healthy seeds, dried fruits and organic porridge oats. A little granola mixed with cereal or yogurt makes a refreshing tasty start to the day, fueling guests for touring the beautiful Kingdom of Kerry. Family and guests alike will love this recipe and it makes a lovely present too for special friends.
Ingredients
500g porridge oats
80g slivered almonds
100g chopped nuts of your choice
80g pumkin seeds
80g sunflower seeds
A good pinch of sea salt
Zest of a lemon and an orange
150mls coconut oil
150mls maple syrup
1 tbls vanilla extract
300g dried fruit, raisins, cranberries, blueberries
orange juice
Instructions
Put your oven on a low setting 110C/225F
In a large mixing bowl mix oats, seeds, salt and zests.
Melt coconut oil and mix in the maple syrup and vanilla.
Now pour this all over the dry ingredients mix to coat.
Divide between two baking trays and put in the oven, you must stir every so often to get an even crispness, bake for one hour.
Meanwhile soak the dried fruit in about 2-3 tbsp orange juice, this helps the fruit from drying out.
After an hour add the fruit to the granola and bake for a further 30 minutes, still giving a stir every so often.
Put into a large bowl to cool down and store in air-tight containers.
