12 Days of Christmas Recipes | Christmas Guinness Cake
Eileen's Christmas Guinness Cake
It's day two of our 12 Days of Christmas Recipes and we've journeyed to West Coast of Ireland to indulge in a delicious Guinness Cake, homemade by B&B host Eileen Murphy of The Orchard Bed and Breakfast in County Limerick. Make sure to give it a try!
Kathy had this to say - "Guinness Cake is my favourite recipe, particularly when it is so easy to make. I got the recipe from my friend Debbie, but didn’t have my glasses on when I tried making it a month later. It turned out great and is a hit with all my guests. A year later I had some of Debbie’s Guinness Cake and it was totally different. I put on my glasses next time I made the cake and where it said a “cup” of Guinness I read a “can” of Guinness. Woops!"
Ingredients
1 can Guinness 500ml
450g self-raising flour
500g Sultanas
250g Margarine, softened
1 cup brown sugar
3 eggs, lightly beaten
1 to 2 teaspoons fine salt
1 teaspoon mixed spice
1 tablespoon of Vanilla essence
1 teaspoon grated nutmeg
9-inch round/square baking tin.
Parchment paper
Method
1. Pre-Heat oven to 160 C and line your 9-inch cake tin on bottom and sides.
2. Simmer Guinness and sultanas for 5 minutes and allow to cool.
3. Cream margarine and sugar in mixer until white and fluffy. Add beaten eggs gradually. (mixer on medium speed).
4. Fold in sieved flour and all other dry ingredients along with the simmered Guinness and sultanas. The mix should be a dropping consistency.
5. Pour the mixture into your lined baking tin and cover with a little parchment paper to keep the cake moist whilst baking.
6. Bake at 160 C for 1 hour and then 140 C for another hour, until baked.
7. Test with a skewer. It should come out clean. Allow to cool in tin.
8. When cold, pierce the cake in a few places and pour a bit of whiskey over it. This adds to the flavour and helps to preserve the cake for longer. It should last for about 6 weeks.
