12 Days of Christmas Recipes | Kingstown House Homemade Baileys Liquor Recipe
We're into the third day of our 12 Days Christmas Recipes and the recipes are just getting tastier by the day! Yesterday we had a wonderful Guinness Cake from Eileen in Limerick so we thought we would need something a little stronger to compliment that delicious stout cake. So we're keeping West and venturing to Kingstown House in the rural setting of Connemara in Galway to try Jim and Regina Hopkins' Homemade Baileys Liquor Recipe.
Ingredients

1 - 397grams/14 oz tin of Carnation's Sweetened Condensed Milk

250 ml of Single Cream

250 ml of Irish Whiskey

3 Tablespoons of Chocolate Syrup

1 teaspoon of instant coffee granules

1 table spoon of Vanilla Extract
Method

Combine all ingredients into blender.

Blend for approximately 30 seconds

Place in clean sterilized bottle and store in refrigerator overnight (try to make before you need so it will cool and thicken overnight, which seems to greatly improve to taste and consistency.)
We made for family and friends recently. The Baileys will keep in a refrigerator for a month, however we find it is best to completely use within 1-2 weeks. Other uses include: pouring over ice cream as a topping and putting in coffee (that would be at the end of the day.)
