Chocolate Chip Muffins Recipe
One of the delights of staying in B&B accommodation is the delicious freshly prepared home-baking that hosts have ready for guests on arrival. It’s a lovely Irish traditional and one that you can definitely look forward to when staying in an Irish bed and breakfast.
Below is a recipe for chocolate chip muffins. My daughter loves to make these on a regular basis. They taste delicious are a really quick and easy to prepare.
Ingredients
175g (6oz) Butter
175g (6oz) Caster sugar
3 Medium sized eggs (whisked)
250g (8oz) self-raising flour
75g Cadbury cocoa
100g (4oz) plain chocolate chips
1tsp vanilla essence
1tsp baking powder
150ml (1/4 pint) milk
Method
1. Preheat oven to 200̊C
2. Cream together the margarine and the sugar.
3. Gradually add a little flour and the a little egg to the mixture, beating well.
4. Continue until all the flour and egg is added.
5. Add vanilla essence, sieve in the cocoa powder and mix well together.
6. Lastly add the baking powder and milk to the correct consistency.
7. Gently fold in the chocolate chips.
8. Put the mixture evenly into queen cake cases or else proper muffin tins either lined with muffin cases or grease the tin well.
9. Bake for approximately 15-20 minutes until cooked.
10. Turn onto a wire cooling tray. Serve slightly warm or cold.
