Rosemary & Cranberry Bread | B&B Ireland Recipe
Geraldine O’ Reilly from Eonish Lodge B&B, Cavan has kindly agreed to share with us the recipe for her delicious Rosemary & Cranberry Bread. Like most of B&B Ireland hosts Geraldine is an amazing baker and enjoys sharing her home-baked goodies with her guests.
This Rosemary and Cranberry bread looks great and really easy to make. I think I’m going to give it a go this weekend.
Rosemary & Cranberry Bread
Ingredients

450g plain flour

1 tsp bicarbonate of soda

1 tsp salt

50g dried cranberries
-
4 sprigs fresh Rosemary, leaves stripped and finely chopped

1 oz margarine

350ml buttermilk
Instructions

Place it on the prepared baking sheet and cut a deep cross through the top (to let the Fairies out!).

Once you have nice soft dough, knead the dough lightly on the work surface and shape it into a round, roughly 15 cm in diameter.

Make a well in the center and add the buttermilk, use a wooden spoon to mix gently and bring the dough together.

Add the chopped rosemary, cranberries.

Sift the flour, soda and salt into a large bowl, rub in margarine.

Sprinkle flour over a baking tray and set aside.

Preheat the oven to 220 degrees or 200 fan oven.

Bake for 15 minutes, reduce the temperature by 20 degrees and bake for a further 20-25 minutes until the bread is evenly golden and crusty. The bread is done if it sounds hollow when the base is tapped.

I have a lovely recipe for Buttermilk Scones from one of our B&B owners that you can try at home. They only take about 20 minutes to prepare and 15 minutes to bake and are totally delicious.
