Kathy Brosnan's Pear, Chocolate and Almond Traybake
Kathy and her tasty recipe's feature regularly on the B&B Ireland Blog. Kathy and her husband have been running Applecroft House Bed and Breakfast for the past fifteen years. Kathy tried this particular recipe recently for guests and only crumbs remained. It's a testament to Kathy's fantastic cooking.
Ingredients

225 g softened butter
-
225g caster sugar
-
1 tsp vanilla extract
-
Zest of one lemon
-
4 free range eggs
-
225g self-raising flour
-
3 tbsp milk
-
3 pears peeled cored and sliced

3 tbsp raisins
-
3 tbsp flaked almonds
-
Honey to glaze and a dusting of icing sugar
Method

Preheat oven to 180* Grease and line a 9-inch square tin.

Place the butter,sugar,extract and lemon zest in a large bowl and whisk together until pale and creamy.

Gradually beat in the eggs

Sift over the flour and fold in with a metal spoon adding the milk

Pour the mixture into the tin and level the mixture with a spatula.

Arrange the pears and chocolate chips on top pressing them in gently.

Scatter over the raisins and almonds

Bake for 45-50min until risen golden and firm to the touch.

Brush all over with a little heated honey

Leave to cool in the tin,then dust all over with icing sugar

Cut into squares and enjoy!
