Victoria Sponge Cake
B&B hosts are renowned for their superb cooking and baking skills. There are numerous reasons why a stay at a Bed and Breakfast in Ireland is a special experience. One of the reasons that stand out is the delicious home-baking that guests can look forward to. Below is a recipe for an easy-to-make Victoria Sponge Cake, just one of the possible tasty treats that may be served to you on a visit to a warm and welcoming B&B in Ireland.
Ingredients
225g (8oz) margarine
225g (8oz) caster sugar
4 medium eggs
225g (8oz) self-raising flour
1 level tsp baking powder
Filling
3 tablespoons jam
Icing sugar, to dredge or vanilla icing
225g (8oz) icing sugar, sieved
85g (3oz) margarine
1-2 tablespoon milk with ½ teaspoon vanilla essence, fresh strawberries to decorate (optional)
Method
1. Place all cake ingredients in a mixing bowl and beat with a wooden spoon until well mixed - 2-3 minutes.
2. Place in 2 greased and bottom-lined 20cm (8 inch) sandwich tins.
3. Bake in centre of pre- heated oven 170’C, 160’C Fan, Gas 4 for 30-35 minutes. Turn out, remove paper and cool.
4.Sandwich with jam and dredge with icing sugar or place icing ingredients in a bowl and mix until smooth. Use to fill the cake and if liked spread or pipe over the top.
