Danabel Porridge Bread Recipe

I started making my Porridge Bread about a year ago. It was so popular with guests who stay at Danobel that I carried on making it. Now, I make it everyday and leave it on the breakfast table for my guests to help themselves. I am always complimented on how tasty it is. The wonderful thing about this recipe is that it is so easy to prepare, yet so delicious! #TasteTheIsland
Required: 2lb Loaf Tin
Ingredients
500g Carton of Natural Yogurt
300g (12oz) of Porridge Oats
1 egg
1tbsp Black Treacle
2 tbsp Flax Seeds
2 tsp Bread Soda
Knob of Butter (to grease tin)
Method
1. Preheat your oven to 180°C/350°F/Gas 4. Grease the loaf tin with butter or line with parchment paper.
2. Place the yogurt, soda bread, and black treacle into a mixing bowl and stir.
3. Now add your porridge oats and mix ingredients thoroughly.
4. Crack the egg into a separate bowl and beat.
5. Add the egg to the rest of the ingredients and mix together until you have a thick dough.
6. Place dough in the prepared loaf tin. Dip a spoon into cold water and smooth the top out so that it is nice and even. Now sprinkle the flax seeds over the top.
7. Place your loaf tin in the centre of your oven and bake for 45 – 50 minutes until it has risen and looks golden brown.
8. Leave to cool for 10 minutes and then turn onto a wire tray to cool further.
