Gluten Free Scotch Pancakes

Needed: non-stick frying pan
Ingredients
4 oz Gluten Free Flour
1 Free Range Egg
4 Fl oz. (120 ml) Milk
1 tsp Sugar
Drop of Vanilla Essence
Butter
Maple Syrup
Fruit of Choice
Method
Put flour and sugar in a bowl and make a well in the centre.
Beat your egg and milk together and pour into the middle of bowl.
Add vanilla essence and mix thoroughly until your mixture is combined and smooth.
Heat a non-stick frying pan with a knob of butter.
Add a heaped dessertspoon of mixture into the pan and swirl to coat the base.
Cook for a few minutes until golden brown and then turn over and do the same for the other side.
Stir the mixture between pancakes and add more butter for frying when necessary.
Serve stacked on top of each other with a drizzle of maple syrup, a squeeze of orange juice or fruit of choice. Simply delicious!
Top Tip: Prepare the mixture in the evening and leave it in the fridge overnight. Stir before using.
