Chocolate Biscuit Cake
This recipe for Chocolate Biscuit Cake comes from Mary McKenna of Gallow’s View Bed & Breakfast in Bunratty, Co Clare. Mary recommends this cake as it only takes twenty minutes to prepare, plus chilling time and is a really great treat to enjoy over the festive season by adults and children alike.
Ingredients
300g Butter
200ml Golden syrup
300g Good quality dark chocolate broken into pieces
200g Digestive biscuits roughly broken
100g Maltesers
100g Mini marshmallows
For the glaze
100g Dark chocolate (good quality)
25g Unsalted butter
50g Icing sugar
75ml Double cream
Hundreds and thousands to decorate
Method

Grease and line 20 cm cake tin.

Melt butter, syrup and chocolate in a pan over a low heat. Stir and make sure all the ingredients are well mixed.

Allow to cool a little before adding in the biscuit, maltesers, and marshmallows. Stir well and combine evenly.

Spoon the mixture into tin, level the top and press down well to avoid bubbles.

Cover and leave in the fridge for 4 hours until its solid and set. Once it’s almost set make the glaze.

Melt the chocolate and butter in a small pot.

When melted, remove from the heat and whisk in the icing sugar and cream.

Allow to cool until the mixture becomes thick enough to form the figure 8.

Pour over the cake, add sprinkles and leave to set.
