Honey Shortbread Creams Recipe
At Christmastime, everyone loves nothing more than a sweet treat or two. These Honey Shortbread Cream biscuits are just the ticket and will be delicious with a cup of tea or coffee. Thanks to Margaret Drennan of Quarrytown Lodge B&B in Co. Antrim for this fantastic festive recipe.
Ingredients
Biscuits
250g (8oz) Butter
½ Cup Caster Sugar
2 Level Tablespoons Honey
Pinch of Salt
2 Cups Self-Raising Flour
1 Cup Custard Powder
Icing
1 ½ Cups Icing Sugar
1 Tablespoons Honey
30g (1oz) Butter
Method

Pre-heat the oven to Gas Mark 4, 350°F, 180°C.

Grease a flat baking tray or line with baking paper.

Cream the butter, sugar and honey until light and fluffy.

Add the custard powder and flour and mix well.

Roll into balls and place on baking tray.

Press each down with a spoon.

Bake in oven for 12-15 minutes.

Cool on wire rack.

When cool, sandwich together with icing.
Icing

Melt butter and honey.

Add icing sugar and mix well.
