Boxty Pancake Recipe
Boxty is a traditional Irish potato pancake that goes great with a Full Irish Breakfast. If you would like something a little different for your breakfast that all the family will enjoy, then this recipe for Boxty Pancakes will go down really well with everyone. I would recommend serving with egg and bacon for a delicious breakfast feast.

Ingredients
4 large potatoes
2 tablespoons of flour
1 teaspoon of baking powder
1/2 teaspoon of salt
Milk to mix
Method

Peel and grate the raw potatoes and squeeze excess liquid out of the potato through a j-cloth or fine clean tea towel.

Make the pancake batter with the rest of ingredients and add the squeezed potatoes. The batter should not be too thick.

Heat a non-stick frying pan over a medium-high heat with a little butter. When the butter begins to foam, spoon heaped tablespoon measurements of the mixture into the frying pan and fry for 3-4 minutes on each side until golden brown.

Best served with bacon and egg.

Sprinkle with salt if desired and a spread of butter.
