Festive Mince Pies Recipe

Thank you to B&B host, Margaret Drennan of Quarrytown Lodge Bed & Breakfast in Ballymena, Co Antrim for this delicious recipe for festive Mince Pies. This family favourite will go down a treat with everyone over the festive season.

Ingredients

Pastry
230g/8oz Plain Flour
40g/11/2oz Ground Almonds
85g/3oz Icing Sugar
l70g/6oz Butter diced
1 Egg yolk
1 Beaten egg for glazing

Mincemeat
For quick mince pies you can buy readymade jars of mincemeat pie filling, or for extra special and tasty mince pies, you can choose to make your own filling.

100g/4oz Cooking apples grated
100g/4oz  Melted butter
100g/4oz  Demerara sugar
100g/4oz Candid peel – finely chopped
225g/8oz Currants
100g/4oz  Seedless raisins
100g/4oz  Sultanas
2 Tablespoons of lemon Juice
 1 Teaspoon mixed spice
½ Teaspoon ground cinnamon
 ½ Teaspoon ground nutmeg
4 Tablespoons of whiskey/brandy or rum

Mix all ingredients together in a large bowl, put into jars and cover well. Store in a cool dry place until required.

Method

1. Sift flour, ground almonds and icing sugar into a warmed bowl.   
2. Rub in the butter.   
3. Stir in egg yolk and work gently to form a soft dough.   
4. Knead lightly, wrap in cling film and chill for 30 minutes.
5. Roll out pastry on a floured board and cut with a round cutter for bases and a smaller cutter for lids.
6. Pre-heat oven to Gas Mark 4, 350 °F, 180 °C.
7. Grease bun tin and place pasty in bun holders
8. Fill with mincemeat
9. Brush the edge of each pie with a little beaten egg, cover with lids and press to seal.
10. Glaze with beaten egg and make a steam hole in centre of each
11. Bake 15 to 20 minutes. 
12. Leave to cool before releasing from the bun tray and sprinkle with a dusting of icing sugar before serving.

Margaret’s Top Tip: Delicious served with Brandy Butter.


Brandy Butter Recipe
170g/6oz Butter – Softened
170g/6oz Icing Sugar
3 Tablespoons brandy


Method
1. Beat butter until pale and light. 
2. Gradually beat in the icing sugar and brandy, beating well between each addition.   
3. Spoon into serving dish, cover and chill until ready to serve.

This can be served with Christmas Pudding and Mince Pies
