Hot Cross Buns Recipe
Hot cross buns are yeasted sweet buns filled with spices and fruit that are traditionally eaten at Easter time in Ireland. They are marked with a cross on the top of the dough which is filled with icing sugar. The buns are easy to prepare when following the below method and make a delicious tasty treat.
Ingredients
4 teaspoons (14g) dry yeast
¼ cup (55g) caster sugar
1 cup (250ml) warm milk
4 cups (600g) plain flour
1 teaspoon ground cinnamon
60g butter
1 egg, lightly beaten
½ cup (125ml) warm water
¾ cup (110g) dried currants
¼ cup (40g) mixed peel
1 tablespoon apricot jam
Flour Paste
½ cup (75g) plain flour
1 tablespoon caster sugar
1/3 cup (80ml) water
Method
1. Combine yeast, sugar and milk in a small bowl, whisk until the yeast is dissolved.
2. Cover the bowl and stand in warm place for about 10 minutes or until the mixture is frothy.
3. Sift flour and cinnamon into a large bowl, rub in the butter.
4. Stir in the yeast mixture, egg, water and fruit, cover, stand in a warm place for about 1 hour or until mixture has doubled in size.
5. Turn dough onto floured surface, knead for about 5 minutes or until smooth and elastic.
6. Divide dough into 16 portions, knead into balls.
7. Place buns into greased 23cm square cake pan, stand in warm place for about 20 minutes or until dough has risen to top of pan.
8. Place flour past into a piping bag fitted with a small plain tube and pipe a cross onto buns.
9. Heat oven to 220C/200C fan/gas 7. Bake for 20 minutes on the middle shelf of the oven, until golden brown.
10. Turn buns onto a wire rack, brush with warm sieved apricot Jam.
Icing Paste Combine flour and sugar in small bowl, gradually blend in water, until smooth.
