Irish Boxty Recipe: A Taste of Ireland
Boxty is a traditional Irish potato pancake that's been enjoyed for generations. It's a simple yet tasty dish that's often cooked in Irish homes and adds to the Irish B&B experience. Originally from the northern counties of Ireland, boxty has become a beloved part of Irish cuisine.
Many Bed and Breakfast hosts in Ireland serve boxty as part of their breakfast offerings. Some hosts may offer boxty alongside the traditional Irish Breakfast or as the main dish, often accompanied by toppings of bacon, eggs or even smoked salmon.
Ingredients
2 cups grated raw potatoes
1 cup mashed potatoes
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/4 cup milk or buttermilk
1 egg (optional)
Butter or oil for frying
Method

Start by grating the raw potatoes using a box grater. Then squeeze out the excess moisture from the grated potatoes using a clean kitchen towel or cheesecloth.

In a mixing bowl, combine the grated potatoes, mashed potatoes, flour, baking powder, and salt. Mix well.

If using, beat the egg and add it to the mixture along with the milk or buttermilk. Stir until everything is well combined. The mixture should be thick but still pourable. If it's too thick, you can add a little more milk.

Heat a skillet or frying pan over medium heat and add a knob of butter or a splash of oil.

Pour a ladleful of the boxty batter onto the frying pan, spreading it out into a round pancake shape. Cook for a few minutes on each side until golden brown and cooked through.

Repeat with the remaining batter, adding more butter or oil to the pan as needed.

Once cooked, serve the boxty warm with toppings of your choice. Some popular options include crispy bacon, fried eggs, smoked salmon, or simply a dollop of butter.
