Applecroft House Scone Recipe

Kathy with the help of her husband Don has been running Applecroft House Bed and Breakfast for the past fifteen years. Kathy enjoys welcoming guest into her home and treating guests to her delicious home-baking. Kathy is kindly sharing her popular scone recipe with us today.

Ingredients:

2lb of self raising flour
½ lb of caster sugar
½ lb of very cold butter
4 free range eggs
Buttermilk
Dried fruit (optional)

Method:

· Preheat the oven to 180 degrees
· Weigh and sieve the flour into a big bowl
· Weigh the caster sugar and add to the flour
· Weigh the butter, cut into cubes and add to the dry mixture
· Rub the butter into the mixture until it looks like breadcrumbs
· Beat the eggs and mix in a little buttermilk
· Add to the bowl (save some wet mixture for egg-washing) and mix with your hands to make a dough, use more buttermilk if the dough is too dry
· Knead a little, very gently! Add dried fruit to dough.
· Cut dough into shapes and place on a floured baking tray.
· Egg-wash the scones and bake for about 15mins until golden
· Cool on a wire rack and enjoy with some butter and jam!

Danabel Porridge Bread Recipe

I started making my Porridge Bread about a year ago. It was so popular with guests that I carried on making it. Now, I make it everyday and leave it on the breakfast table for my guests to help themselves. I am always complimented on how tasty it is. The wonderful thing about this recipe is that it is so easy to prepare, yet so delicious!
