Banana Bread Recipe

Thank you to Philomena, B&B host of Imeall Na Mara B&B in Dingle, Co Kerry, for this tasty recipe for Banana Bread. Not only is this bread utterly delicious, it is also a healthy option that goes wonderfully with a cup of tea/coffee. If you have some ripened bananas, don’t throw them out, make some banana bread instead. The riper the better, for a yummy energy boost treat that everyone will enjoy!

Required: 2 lb loaf tin


3 bananas                                                                      
110g butter
150g caster sugar
185g plain flour
2 eggs
1 teaspoon bread soda
115g walnuts
70g sultanas
1/2 teaspoon vanilla


  1. Lightly grease the loaf tin and line it with non-stick baking parchment.

  2. Pre-heat the oven to 180°C/350°F/Gas Mark 4.

  3. Blend all ingredients in a food processor for a few minutes or beat by hand for about 10 minutes with a wooden spoon. 

  4. Spoon the mixture into the prepared loaf tin and level the surface.

  5. Bake for about 50 minutes, until golden brown.

  6. Leave the bread to cool in the tin for a few minutes, then loosen with a knife and turn out. Leave on a wire rack to cool.

Top Tip: Banana Bread can be frozen, just wrap in in clingfilm and then a layer of foil or use a resealable bag. To defrost, remove from the freezer and stand at room temperature for 3-4 hours.
