Rosemary & Cranberry Bread | B&B Ireland Recipe

Geraldine O’ Reilly from Eonish Lodge B&B, Cavan has kindly agreed to share with us the recipe for her delicious Rosemary & Cranberry Bread.  Like most of B&B Ireland hosts Geraldine is an amazing baker and enjoys sharing her home-baked goodies with her guests.

This Rosemary and Cranberry bread looks great and really easy to make.  I think I’m going to give it a go this weekend.

Rosemary & Cranberry Bread


  • 450g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 50g dried cranberries
  • 4 sprigs fresh Rosemary, leaves stripped and finely chopped
  • 1 oz margarine
  • 350ml buttermilk


  1. Place it on the prepared baking sheet and cut a deep cross through the top (to let the Fairies out!).
  2. Once you have nice soft dough, knead the dough lightly on the work surface and shape it into a round, roughly 15 cm in diameter.
  3. Make a well in the center and add the buttermilk, use a wooden spoon to mix gently and bring the dough together.
  4. Add the chopped rosemary, cranberries.
  5. Sift the flour, soda and salt into a large bowl, rub in margarine.
  6. Sprinkle flour over a baking tray and set aside.
  7. Preheat the oven to 220 degrees or 200 fan oven.
  8. Bake for 15 minutes, reduce the temperature by 20 degrees and bake for a further 20-25 minutes until the bread is evenly golden and crusty. The bread is done if it sounds hollow when the base is tapped.

Danabel Porridge Bread Recipe

I started making my Porridge Bread about a year ago. It was so popular with guests that I carried on making it. Now, I make it everyday and leave it on the breakfast table for my guests to help themselves. I am always complimented on how tasty it is. The wonderful thing about this recipe is that it is so easy to prepare, yet so delicious!
