Meet your host | Phyllis McGovern | Ashleigh B&B

This week we have a chat with Phyllis McGovern.  Phyllis is the owner of Ashleigh B&B in Waterford, and has joined us this week to tell us all about her home and the area she lives in.


What are the hidden gems close to your home?

Close to Ashleigh B&B is a great local pub/restaurant where you can sit and have a chat with the locals while enjoying a pint of Guinness.  We are also lucky to have our local GAA hurling field beside us where guests can watch the local team practise or get to watch a lively game of hurling whilst having the locals explain how the game is played.


What is your favourite guest story?

I have a wonderful French lady who comes to stay with me each year who has a huge interest in Irish history and Michael Collins. She is referred to as the mysterious French lady who has flowers laid each month on Michael Collins grave in Glasnevin. She is now a great friend of the family.


What is your signature dish/food?

My breakfasts are all freshly cooked to order using local and in season ingredients and part of that breakfast is my homemade brown bread.  It’s made with the same recipe that my mother used to bake. Presently my homemade plum jam and blackberry jam are a great favourite with guests. I handpicked the fruit from our garden and hedgerows.


Is there anything about your home that is quirky?

Perhaps having doggie and cats outside for guests to have fun with and get their pet fix. Also guests love to hang their washing on my clothes line in the garden as it brings back memories of their childhood.


Have you ever had any famous guests?

The Indian Ambassador to Ireland was one of my first guests nearly 18 years ago. He chose Ashleigh House as my daughters were of the same age as his two girls.


What is your favourite thing about the area you live in?

The people, and the benefits of country living with a city (Waterford) on my doorstep. 


When you are not looking after your guests what is your favourite thing to do?

My favourite thing to do when I have the time is to work in the garden. I love nothing more than picking a bunch of fresh flowers and putting them in a vase in the hall.


What are your top 3 attractions in this county?

Viking Triangle combining House of Waterford Crystal, Medieval museum, Bishops Palace, and Reginald’s Tower.

Mahon Falls at the Comeragh Mountains with the magic road en route.
