B&B Recipe of the Week – Nectarine Crumble Cake

This week's Recipe of the Week  is a wonderful Nectarine Crumble cake which has become a signature bake for Kathy Brosnan of Applecroft Bed and Breakfast in Killarney, Co. Kerry. Kathy serves her guests a delicious slice of Nectarine Crumble Cake which can be enjoyed at breakfast, afternoon tea or as a desert topped off with custard and cream. Kathy's recipe's are a regular feature for Recipe of the Week and are very popular with us here at B&B Ireland. We highly recommend you give this recipe a try.

Ingredients

140g Connacht Gold Butter
140g caster sugar
4 free range eggs at room temperature
1½ teaspoons of vanilla essence
140g plain flour
1 teaspoon of baking powder
6 nectarines halved and stoned

The Crumble Topping

115g light brown sugar
1½ teaspoons of ground cinnamon
85g Connacht  Gold Butter

Instructions

Preheat oven to 180°C

Make the Crumble Topping by combining all ingredients and rubbing in the butter to look like course breadcrumbs. Set aside.

Line a 10x2in  spring form tin with greaseproof paper.

Cream the butter and sugar until light and fluffy, beat in the eggs one at a time then add vanilla essence.

In another bowl sift the flower and baking powder, then fold into the butter mixture in three goes.

Pour the mixture into the tin and arrange the nectarines by pushing them slightly down into the mixture.

Sprinkle the crumble topping over in an even layer.

Bake for 45 minutes or until a skewer inserted in the centre comes out clean.

Leave to cool in the tin.
