Festive Black Pudding Sausage Rolls
If you are looking for something a little bit different to thrill your visitors and family with over the festive season, then this recipe for Black Pudding Sausage Rolls is ideal. These savoury delights are so delicious and go so well with cranberry sauce. The rolls are suitable for freezing, so you’ll always have something tasty at the ready.
Ingredients
1 Onion finely chopped
1 Apple peeled and finely chopped
6 Leaves of sage chopped or some dry sage
200g Sausage meat
200g Black pudding Chopped
Handful of fresh breadcrumbs
250g by 2 Readymade puff pastry
1 Egg
A little milk
Sea salt
Method
1. Pre-heat oven to 190 °C / 356°F
2. Place a small frying pan on the stove and sauté onion in a little olive oil until soft, add chopped sage and cook for a further two minutes.
3. Put sautéed onions into mixing bowl and allow to cool. When cooled, add chopped apple, sausage meat, black pudding, breadcrumbs and mix well.
4. On a floured surface, roll the puff pastry to the thickness of a euro, if it isn’t already pre-rolled.
4. Brush the sheets with egg wash (beaten egg and milk). Spoon the sausage mixture between the two sheets and fold the pastry over.
5. Press down with a fork to seal and brush the sausage rolls on the outside with a little egg wash and sprinkle with some sea salt.
6. Place in the fridge for 15 minutes to cool.
7. When chilled, cut into desired six or if preferred, bite size rolls, and score across the top of each roll twice and place on baking tray lined with parchment paper. Bake for approximately 20 minutes at 190°C / 356°F until golden brown.
8. Place on rack to cool.
Enjoy!
Top Tip: Suitable for freezing. Freeze on a baking tray. Once frozen place in Tupperware and return to freezer.
