Easy to prepare Blueberry Muffins Recipe

This Blueberry Muffin recipe will tantalise you taste-buds and provide an insight into the wonderful homemade treats that are awaiting you in our quality-assured Bed and Breakfast homes of Ireland.
Makes 12 muffins Required: Medium-sized muffin pan
Ingredients
600g Self-raising flour
300g Golden caster sugar
300g Fresh or frozen blueberries
2 egg, lightly beaten
360ml Buttermilk
250ml Vegetable Oil
Method

Grease 12 hole muffin pan. Grease evenly or coated with non-stick spray.

Sift dry ingredients into large bowl, stir in remaining ingredients and mix with a metal spoon.

Spoon mixture into prepared muffin pan. Slightly more than half-filled with mixture.

Bake in moderately hot oven (200°C /400°F /Gas Mark 6) for about 20 minutes. To test if muffins are cooked, push a skewer into a muffin, when withdrawn, the skewer should be free from muffin mixture.

Remove from oven and cool in pan for 10 minutes, then turn muffins onto a wire rack.
Muffins are simple to make and are delicious eaten hot, warm or cold. They are best made on the day of serving.
Top Tip: Cold muffins freeze well. Transfer to freezer wrap or freezer bags before freezing.
