300g  Fresh or frozen blueberries
2 egg, lightly beaten
360ml Buttermilk
250ml Vegetable Oil

Method

  1. Grease 12 hole muffin pan. Grease evenly or coated with non-stick spray.

  2. Sift dry ingredients into large bowl, stir in remaining ingredients and mix with a metal spoon.

  3. Spoon mixture into prepared muffin pan. Slightly more than half-filled with mixture.

  4. Bake in moderately hot oven (200°C /400°F /Gas Mark 6) for about 20 minutes. To test if muffins are cooked, push a skewer into a muffin, when withdrawn, the skewer should be free from muffin mixture.

Muffins are simple to make and are delicious eaten hot, warm or cold. They are best made on the day of serving.

Top Tip: Cold muffins freeze well. Transfer to freezer wrap or freezer bags before freezing.
