Growing up I definitely think I took summer in Ireland for granted. Home overlooked a scenic harbour, where summer days were spent crab fishing off the pier, taking boat rides and enjoying regular dips in the lapping waters.

Nothing quite beats the wind in your hair and the open road in your sights, with the promise of a cosy bed and hearty meal in a nice bed and breakfast at the end of an active, healthy day outdoors. In fairness you are probably not going to cycle all 2500 kms of the longest coastal route in one trip, but you could easily do a couple of chunks and come back another time to sample the rest.

This is a really quick and easy recipe for Chocolate Chip Cookies. My daughter loves baking and so we enjoyed too many of them over the weekend. The only draw back to making these delicious cookies is that one batch is never enough as they are so darn tasty!
