Christmas Fruit Trifle | 12 Days of Christmas Recipes

Randwick B&BDay 7 of our 12 Days of Christmas Recipes and we're on our way to the oldest town in Ireland - Ballyshannon in County Donegal. John Hughes of Randwick Bed and Breakfast has kindly shared his tasty Christmas Fruit Trifle with us to try our hand at over the Christmas holidays.

Trifle is a very old English dessert, although its direct ancestry is not known and several different traditional desserts are claimed as its forebear. Like those old dishes, a modern trifle can be varied in many ways. Strictly, it should always include sponge cake, sherry or some other wine or spirit a rich custard and whipped cream.


  • 200g Sponge Cake (Approximately)
  • 410g tinned summer fruit
  • 3 whole pears tinned (Sliced)
  • 3 whole peaches tinned (Sliced)
  • 140g strawberry jelly
  • 30ml sherry


  1. Split the sponge Cake and arrange in a dish.

  2. Strain the juice of the fruit into a measuring jug.

  3. Add the sherry and the water to make up 550mil liquid volume.

  4. Place all the fruit Jelly and liquid into a saucepan, bring to a boil & let simmer for a few minutes and let for a short time. Pour the contents over the sponge cake and mix and let cool.


  • 350ml milk
  • 2 eggs
  • 1tbsp sugar
  • Dash of vanilla essence
  1. Make the custard and allow to cool. Then pour over the sponge.

  2. Whip, the cream, pile on the top. Decorate with either of the following: cut Cherries, shredded almonds or passion fruit.
