Phyllis's Brown Bread Recipe

B&B Ireland’s very own Phyllis McGovern from Ashleigh House B&B in County Waterford, managed to get all the way to the final day's judging of the National Brown Bread Baking Competition, which was held at the world renowned National Ploughing Championships in Co Laois recently. This is a massive achievement and well deserved. The great news is that Phyllis is sharing her wonderful brown bread recipe with us today! I can’t wait make it, can you?

IngredientsAshleigh House B&B Brown Bread Recipe

1 0 ozs of coarse wholemeal flour.
4ozs of plain white flour
1 level tablespoon of oat bran
1oz of oat flakes
1 level tablespoon demerara sugar
1 level tablespoon flax powder and goji berries (crushed)
Pinch of salt
1 teaspoon of bread soda
1 egg
1 tablespoon sunflower oil
400ml of buttermilk (use just enough to make sloppy mix)
By reducing the buttermilk you can add a little cream.


Ashleigh House B&B Brown Bread RecipePreheat oven to 180deg. Grease a 2lb loaf tin.
Weigh and measure all ingredients
In a mixing bowl, combine the two flours
Add bread soda, sugar and salt. Mix well
Add bran, oatflakes, flax powder and goji berries and mix thoroughly.
In a separate bowl, put in egg and beat, add buttermilk and then add sunflower oil and cream if desired.
Add wet mixture to dry mixture. Stir well
Put in loaf tin and sprinkle with pinhead oatmeal.
Bake for 40-50min until golden brown
