Chocolate Chip Cookies
This is a really quick and easy recipe for making chocolate chip cookies. My daughter loves to bake and these cookies are her speciality. The only draw back to making these cookies is that one batch is never enough as they are so darn tasty! B&B hosts are renowned for their home-baking and one of the delights of staying in bed and breakfast accommodation is the delicious home-baking hosts provide to their guests as part of the B&B experience.
Ingredients
150g/5oz Self Raising Flour
75g/3oz Porridge Oat-flakes
125g/4oz Margarine (at room temperature)
1 Egg
1 teaspoon Vanilla Essence
125g/4oz Light Brown Sugar
125g/4oz Chocolate Chips or Plain Chocolate (roughly chopped)
Method
1. Preheat the oven to 190OC/375OF/Gas 5. Lightly grease two baking trays.
2. Place the margarine and sugar into a bowl and beat until the mixture is smooth
3. Add the egg and the vanilla essence and beat again
4. Finally stir in the flour, oat-flakes and chopped chocolate. Mixture will be very stiff.
5. Place teaspoons of mixture on the baking trays, leaving a space between each to allow for spreading
6. Bake for about 15 minutes until beginning to turn golden brown. Cool for 2 or 3 minutes on the baking tray and then transfer to a wire tray to cool completely
