Festive Mince Pies | 12 Days of Christmas Recipes
Day 9 of our 12 Days of Christmas Recipes is upon us and we felt that this recipe just had to be shared with all of you. Clare, one of the B&B Ireland team members was kind enough to introduce her baking talents to us with her very own homemade Festive Mince Pies. They went down an absolute treat in the office and left us wanting more! So here it is folks and we hope you enjoy.
Ingredients

100g/4oz Cooking Apples grated

100g/4oz Melted butted

100g/4oz Demerara Sugar

100g/4oz candid peel – finely chopped
-
225g/8oz Currants
-
100g/4oz Seedless Raisins
-
100g/4oz Sultanas
-
2 Tablespoons Lemon Juice
-
1 Teaspoon mixed spice
-
½ Teaspoon ground cinnamon
-
½ Teaspoon ground nutmeg

4 Tablespoons of Whiskey/Brandy or rum
Mix all ingredients together in a large bowl, put into jars and cover well. Store in a cool dry place until required. I usually put into one large jar and turn everyday until required.
Pastry

225g/8oz Plain Flour
-
50g/2oz Icing Sugar
-
150g/5oz Butter – at room temperature
Beaten together
-
1 egg yolk
-
1 Tablespoon ice-cold water
-
½ Teaspoon Lemon juice
Method

Sieve flour and icing sugar together.

Place the flour mixture in a mixing bowl, together with the butter and beaten egg mixture.

Beat together until well mixed.

Add remaining flour and mix to a firm dough.

Knead lightly until smooth. Place in a polythene bag or wrap in cling film and leave in fridge for 1 night (best if made the night before).

Pre-heat oven to Gas Mark 6/Electric 400°F or 200°C.

Roll pastry on a floured board and cut around with cutter to fit greased bun tins.

Put a teaspoon of mince meat in each and cut a ‘lid’ from the remaining pastry to put on top.

Bake for about 15 minutes or until golden brown.

Dust with icing sugar.
