Irish Breakfast Scone Recipe

This is a delicious and easy to make recipe for Irish breakfast scones. You’ll get to sample this type of home-baking when you stay in an Irish bed & breakfast. Try this recipe at home, the tasty scones will be a real hit with everyone!

Ingredients

1 lb self-raising flour
4 ozs butter
2 ozs caster sugar
2 eggs – whisked
1 cup of milk – approximately

Method

1. Sieve dry ingredients into a bowl
2. Rub in the butter
3. Make a well in the centre
4. Add the whisked eggs and milk to the mixture (Keep a little of the egg/milk mixture for brushing over the scones)
5. Mix to a loose dough
6. Turn onto a floured board and knead lightly
7. Roll out dough to about 1” thickness
8. Cut out scones, put on a baking tray and brush with beaten egg
9. Bake in a hot oven – 200C/400F/Gas 6 – for 20-30 minutes or until golden brown

The sole distinction between caster sugar and granulated sugar lies in their texture. Caster sugar features finely ground crystals compared to the coarser crystals of granulated sugar. This finer texture enables caster sugar to dissolve more rapidly than granulated sugar, particularly in creamed mixtures.
In relation to hard and soft scones...it just depends on how they were made, stored and ingredients used.

First what is caster sugar
I visited Cork, 12/1991 the homemade scones I had where we were staying in Cork were mostly dry and slightly hard.
You say yours are soft. Why the difference if both are from Ireland?
