Recipe of the Week - Healthy Granola
Our recipe of the week comes from B&B host Eilis Dennehy of Sea Breeze Bed and Breakfast in Cahersiveen in the kingdom of Kerry. Eilis has been welcoming visitors to her home for many years and loves to cook. Her homemade jams, marmalade and soda bread is a big favourite among guests. Here's a tasty and healthy Granola mix that Eilis enjoys making. Thanks Eilis!
Ingredients

300 gr Jumbo Oatmeal

100 gr mixed seeds

100 gr nuts
Method
1. Mix these three ingredients.
2. Melt the following three together.

2 Tablespoons boiling water

2 Tablespoons honey
-
2 Tablespoons maple syrup
3. Stir into the dry ingredients and mix very thoroughly.
4. Line a baking tray with greaseproof paper lightly brushed with olive oil.
5. Oven temperature Gas 3 / 325F / 160C.
6. Bake 30 – 40 minutes. Be careful towards the end of baking as it can burn easily.
7. Stir every ten minutes so that it evenly toasts.
8. Put into a bowl to cool.
9. When cool add dried fruit (eg cranberries).
10. Store in a airtight jar.
